There’s a delicate balance to omelettes. Often they are an excuse to consume a concerning amount of cheese at the very start of the day, but when prepared just right, they can be packed with tender vegetables, unique herbs and delightful bits of cheese. As I gazed at the several egg options that Among The Flowers in Edgartown specialized in, a cool gust of wind sent my blond hair dancing in every direction. The cafe, flooded with vibrant flower pots, feel-good music and more coffee than I could handle, was already satisfying enough, and I hadn’t even ordered yet! That’s when I saw it; “The California Omelette:” avocado, tomato, American cheese and caramelized onions complimented with toast, a pineapple wedge and melon. I was sold. Piercing the fat omelette with my plastic fork, steam released accompanied by a deep aroma. Pausing to take in the moment, I couldn’t help but smile.
