Ralston Francis, a native of Jamaica, is the proud chef and co-owner at the Edgartown Diner, an all American restaurant both in cuisine and decor. Love is what originally brought Ralston over to the island and has kept him here ever since. He and his wife, Mavis Hutchinson, took over in 2015 and now coown the Edgartown Diner. It is located in downtown Edgartown under the Edgartown Cinemas. They are pleased to serve breakfast and lunch through June and dinner starting in July.

TW: When did you first discover your passion for cooking? Ralston: My mom taught me. It started in high school at Denbigh High School in Denbigh, Jamaica and then continued when I went to community college in Portmore. Then I finished school at Southern New Hampshire University and got my Bachelor’s in Hospitality and Tourism Administration.

TW: What is your favorite dish to make at Edgartown Diner? Ralston: The Southern Bennie. A grilled cornbread with fried chicken, poached eggs, and gravy.

TW: Who is your biggest inspiration in the culinary industry? Why? Ralston: Marcus Samuelsson because he cooks with love. Cooking is an art. He always coming up with new stuff. He is very creative.

TW: Where do you see yourself ten years from now? Ralston: As a restaurateur. I’d love to own more restaurants and try other business ventures.

TW: What is the strangest food you have ever tasted or cooked with? Ralston: The first time I had sushi. The wasabi was so spicy and was something I wasn’t used to.

TW: Tell me your favorite ingredient to cook with. Ralston: Garlic. I love the way garlic tastes and smells.

TW: What style do you prefer your eggs to be cooked? Ralston: I prefer over hard. At the diner, we prepare eggs any style you’d like.

TW: Can you tell me a fun fact or something that most other people might not know about you? Ralston: I am a very outgoing person and I like to discover new things with cooking and outside of cooking.
